Project Overview

Gallant Orbit was entrusted with the design of this Foldable Restaurant Shack in Palolem, South Goa, led by Project Head ER. Rashid. The design vision draws directly from the coastal setting, using natural bamboo and thatch construction to create an open-air dining structure that feels rooted in its beachside surroundings rather than imposed on them. Built around and beneath existing palm trees, the shack embraces its site instead of clearing it, letting the natural canopy work alongside the built roof structure. The result is a relaxed, indigenous hospitality space that reads as an extension of the Goan coastal landscape.

Scope & Execution

The scope covered the full structural and interior design of the shack, built primarily from bamboo framing and woven thatch roofing in a distinctive radial, umbrella-like form over the main dining area. Wooden dining tables and chairs are arranged across the sand and paved flooring, with woven bamboo partition screens used to define softer, more private seating pockets within the open layout. String lighting is strung low across the dining zones, wrapping around the tree trunks and structural posts to give the space a warm, ambient glow after dark without disrupting its open-air character. The bamboo roof structure itself does double duty as both shelter and design statement, its layered, textured form visible from both inside and outside the shack. Gallant Orbit coordinated the structural bamboo work, thatch roofing, furniture layout, and lighting together, working with the site’s existing trees rather than around them, so the finished space feels grown into its location rather than constructed on top of it.

Outcome & Impact

The completed shack gives its operators a distinctive, atmospheric dining destination that stands out through its material honesty rather than manufactured decor. The natural bamboo and thatch construction, combined with the tree-integrated layout and warm string lighting, creates an experience that feels authentic to its Goan beach setting, day and night. It stands as a strong example of how thoughtful restaurant interior design in a coastal hospitality context can lean into a location’s natural character, turning the site itself into the design’s defining feature.
